Nicholas Arthur Frederick Edward Pembrook, Crowned Prince of Wessco, aka “His Royal Hotness,” is wickedly charming, devastatingly handsome, and unabashedly arrogant―hard not to be when people are constantly bowing down to you.
Then, one snowy night in Manhattan in a family owned coffee shop named, Amelia’s, the prince meets a dark haired beauty who doesn’t bow down.
Instead, she throws a pie in his face.
Nicholas wants to find out if she tastes as good as her pie, and this heir apparent is used to getting what he wants.
Pie Crust:
Mix flour, salt, and shortening in mixing bowl. Sprinkle with the water, a little at a time, until moistened.
Cover dough with plastic wrap and refrigerate for 30-45 minutes.
Divide dough in half.
On a floured surface with rolling pin, roll out dough to fit pie plate (9-inches).
Lay bottom crust into pie plate, pressing on bottom and sides.
Roll out second half of the dough on floured surface and set aside.
Apple Pie Filling:
Heat oven to 425 degrees Fahrenheit
Mix sugar, flour, cinnamon and nutmeg in a bowl
Pour mixture over peeled, sliced apples and stir gently
Fill crust-lined pie pan with coated apples
Cut butter into 5 pieces and place on top
Cover with second crust and fold/pinch edges together
Make 4 half-inch cuts in the center of the top crust
Sprinkle with extra sugar
Bake 35 minutes or until golden brown
